Handpicked from a selection of low yeilding plants from each of the 6 dijon clones. The grapes are cold soaked for 1 week before fermenting with the indigenous yeasts present on the skins and in the vineyard. After ferment the wines stay in contact with the grapes until the desired tannin profile has been reached. The wines are then pressed off into 35% New tight grained French barriques. After one year of ageing in the barrels the wines are gently fined using egg whites and bottled with no filtration or further fining. The Iliad Wines shows exceptional finesse and character and are destined for ageing.
